As many of my readers, I love experimenting with new recipes and winging it with flavors I love to create new dishes at home.
The problem is, without the time to expertly try recipes over and over to get the flavors AND presentation perfect, we often end up with delicious, yet, unslightly recipes.
Case in point -- I needed to use up some leftover ingredients from earlier in the week and make myself breakfast. With tricolor peppers, chopped onion, eggs, and extra baby shrimp that didn't go into my shrimp salad earlier this week ... you know where I'm going with this.
Coastal Scrambler.
2 eggs, lightly beaten
1/2c frozen or leftover sliced tricolor peppers
1/2c leftover diced onion
1/4t Old Bay Seasoning
1 small package 'salad shrimp' - aka baby shrimp (cooked)
Heat a non-stick pan over med-high heat. Saute veggies and shrimp together for 3-5 minutes until onion is cooked. Add in beaten eggs and Old Bay Seasoning and stir constantly until egg is cooked.
So delicious, yet so unattractive.
And a little NI (Nutritional Information) for you (as prepared above):
Calories - 227
Carbs - 16
Fat - 10
Protein - 19
The whole eggs are the biggest contributor for both the calroies, fat, and protein. This is a very filling meal, though.
