Instant Pot Chicken Marsala


Day two with my Crock-Pot Express (CPE), aka Instant Pot.

Tonight, we are making Chicken Marsala, one of The Captain's favorites. Since I'm preparing to get back into the 21 Day Fix starting on January 15 (with the new 80 Day Obsession plan!), I'm going to enjoy the chicken and green beans only, while the rest of the family will have egg noodles with their chicken.

I found a simple enough recipe on Pinterest that I'm going to adapt to work for our family's tastes a little bit better.

Here is the plan:

Ingredients:
- 2 lbs chicken thighs, boneless, skinless
- 1 T olive oil
- 1/2 t garlic powder
- 1/2 t salt
- 1/4 t black pepper
- 1/2 yellow onion, diced
- 1 pint sliced baby Bella portobello mushrooms
- 1 c Marsala wine
- 1/4 c chicken stock or broth
- 1 T minced garlic

Instructions:
- Set device to “Sauté” and add oil. Allow to heat for 1 minute.
- Season chicken with salt, pepper, and garlic powder
- Add chicken to pot and sear meat for 3 minutes on each side. You may have to sear in batches based on amount of chicken. Set aside.
- Still on “Saute”, place onions and mushrooms in pot with another Teaspoon of olive oil. Sauté 3 minutes, then add minced garlic and sauté another minute.
- Add chicken back to pot with the vegetables. Add Marsala wine and broth. Close lid and set to “Poultry” at 20 minutes.
- At the end of cooking, I use a NPR (natural pressure release) for about 10 minutes, the. Use a wooden spoon to QR (quick release) any residual pressure.
- Depending in how thick you like your sauce, you may need to thicken it. To do so, take about 1 c of the liquid out of the pot and put it in a glass bowl. Add 2 t of flour or corn starch and mix well with a fork or whisk until there are no lumps. Return to the pot, stir, and allow to sit for 10 minutes to thicken.


Serving suggestions:
- Over egg noodles or pasta
- With traditional or garlic mashed potatoes
- Great with any veggies — we served with fresh steamed green beans

After the Chicken was done, I transferred the CPE's contents to a Pyrex and gave the insert a quick rinse. Added in 1 c of water and the juice of half a lemon, then placed the steamer insert inside. I added 3 c of fresh green beans on top and quickly steamed them in the CPE as a side dish.
I cooked the egg noodles on the stovetop while the chicken cooked.

(Suggestion- skip the flour/thickening step if following the 21 Day Fix)

DIY Burlap Placemats

BLOG UPDATE! These placemats are now available on my Etsy store TheSundayPaperie Customize with any words you'd like! I saw this picture on Pinterest, courtesy of the design blog, Cottage and Vine , and fell in love with the simplicity and quirkiness of these placemats.
